WHAT YOU NEED
Tomato sauce or tomates
Onion
Eggs
Chickpeas
Limes
Herbs, cheese and spices of choice
Xuan Used: Parsley, mint, goat cheese, cumin, salt pepper
WHAT TO DO
Saute onions in the pan (you can add garlic here if you have)
Strain and wash chickpeas. Then mash some up. We did about half of the can mashed up but up to your desired consistency.
Add tomato sauce and spices and let simmer
Add the goat cheese and lime zest. Can stir the cheese in or leave in clumps.
Let simmer and then test. Does it need more salt? More lime? Black pep?!
Once almost boiling, add eggs and herbs
Cover and cook until desired egg yolk consistency. We had medium well at about 7 minutes.
Serve with toasted bread. Would also be good with potato or rice.
*next time i want to try this with ground lamb instead of chickpeas
